The Annabel Challenge - (Rice Bubble) Chicken Nuggets
These are delicious! The chicken is so moist and tasty. I love them!
Annabel Karmel's Krispie Chicken Nuggets
I used 300g of Free Range Chicken Breast and the marinade and coating quantities easily stretched the extra 100g.
I cut it into 17 nuggets but quite a few were bigger than the others (it's not easy cutting a chicken breast into identically sized chunks) so I could have gotten 20+ nuggets out of the 300g chicken breast.
I fried them for lunch as the kidlets were 'hun-gie' and then I was massively disappointed as they took one bite and hated them. Not even Eva would eat them. (Linc rathered the baby spinach!) The clove of garlic I put in the marinade WAS rather large, and I think that was an issue. They're not big garlic eaters. Maybe next time I'll use a bit of paprika and oven bake them.
Just a few tips:
Annabel Karmel's Krispie Chicken Nuggets
- When coating, use one hand for the wet ingredients and one for the dry. It stops your fingers from becoming all claggy.
- Let them have a good cool down. The crumbs keep the heat in really well and they hold together a bit better once they have cooled off.
- This would be great for chicken schnitzel marinade and coating.

Not Meeting My Own Expectations
I have been feeling an immense amount of pressure lately.
Whether it's actually there, or whether I am just imagining it's presence remains to be seen.
Pressure to keep the house immaculate, pressure to give the kidlets constant attention, pressure to get the highest marks in my course, pressure to serve well thought out and nutritious meals at every sitting.
I can not shake this cold and therefore I'm constantly tired. As a result I'm morphing in to grumpy guts mummy. I have very low tolerance of the usual toddler ways. But I think the kidlets have sensed my low tolerance levels and stepped up their game.
I've had to drop the toilet training as we weren't getting anywhere and I couldn't deal with it while my head pounded and I coughed up a lung. I feel like a failure.
I have an Assessment due in 2 weeks that is worth 40% of my mark. And I'm struggling a bit with it.
The house looks anything but immaculate, on a good day.
A lot of the meal organisation has fallen to Baker Bob, so nutrition is on the backburner.
I have been offered help and accepted it on a occasion. My lovely parents stayed Friday night and put the kids to bed, got up to them when they stirred and woke to them in the morning, making them pancakes.
But it seemed so short lived. I'm hoping once the assessment is finished I can move my focus, but I feel terrible for the state my mothering is in at the moment. Hopefully it doesn't screw them up too badly.

Watching Vintage Wiggles.
The kidlets have really strtaed enjoying The Wiggles lately. Particularly Eva.
We have a live CD that we play in the car that was recorded back when 'the yellow wiggle' was known as Greg.
As a Christmas present we bought them tickets to see them at their 20th Birthday Bash in December. While I was in Kmart the other day I noticed they had re-released some of the old videos so picked one up for them to watch. I enjoy vintage wiggles more than modern 'Wiggly Waffle".
As a side note, can you guess who's wearing the red PJs?

Mummies Don't Have Fun
Our quiet little cul de sac has recently been totally disrupted by the sounds of metal on metal, the reversing beeps of trucks and the general constant sounds of a construction zone.
And I'm a wee bit excited by it!
You see at the end of our cul de sac, just 4 houses down is an empty block that had a path that leads out to one of the local side streets. Everyday at 3:30pm the local primary school kids would wonder through the cul de sac and use the empty block as a cut through. Then, about 3 weeks ago, a truck reversed down the cul de sac and put up temporary fencing. Of course I was concerned for the poor primary school kids that now had to walk the long way around, but my interest was well and truly piqued.
A week ago I went out to get the mail and as had become my habit, I looked down at the empty block but it wasn't empty anymore!
There, in all it's primary colour glory, was a slide.
I couldn't believe it, they were putting in play equipment just 4 houses down the street.
"It's so close I could just leave the kids there and come home," I shouted at Baker Bob down the phone with excitement.
I smiled all day imagining what fun we'd all have there. It was only as I was getting ready for bed that night that I realised how depressing it was that I was so excited by play equipment.
The slide was nowhere near big enough for me!
(Just for the record I would not leave my toddlers unattended there. Not unless I tied them to something sturdy first. Wouldn't want them causing traffic chaos!)

Christmas in July is almost here!
A family friend and my parent's decided a few years ago to celebrate Christmas together in the middle of the year. The idea was to split the cost of christmas into two different times and to put less pressure on everyone to meet up at the usual time of year. We have a bit of a lunch party and open presents - one for everyone from one family to another. I spent today Christmas in July shopping.

Please note the toddlers beds which I cleverly (if I do say so myself) turned into a double toddler bed, to eliminate the problem of Linc squishing into bed with Mans. Only problem is I now have to use a double bed flat sheet instead of 2 x fitted cot sheets!

A Photo From My Day for 30 Days - Day 10
Today we got home from my Uncle's 60th birthday party (post to come). The kidlets were tired and cranky and we were all freezing cold. I realised as I walked in I hadn't pulled down anything for dinner.
Baker Bob suggested that we have soup and toast for dinner. I wanted to give the kidlets something warm and filling, throw them into a bath and then into bed nice and early.
I walked into the kitchen and looked in the fridge. I had a tray of 6 rissoles I'd picked up cheap from the supermarket yesterday. I thought what I'd do is I'd make them into meatballs . This inspired me to whip up a homemade version of tinned meatball and spaghetti, complete with vegetable ladened sauce.
They all loved it! I couldn't believe it. My "throw together meal" would be the one the kidlets gobbled down. Now if I could just remember what I put into it, I could make it again!

Can I just say that my 3 children have been 'dancing' like this to heavy metal music since they were in utero. Try as I might to change their preferences in music, Baker Bob's genres remain their favourites!

The Annabel Challenge - Welsh Rarebit (Special grilled cheese)
All 3 kidlets were napping and Baker Bob mentioned he was hungry.
So, armed with my Annabel cookbook I had a flick through to find something we could have for afternoon tea. It needed to be minimal fuss with maximum taste.
Annabel's Welsh 'Rabbit' recipe caught by eye. Who doesn't love grilled cheese on toast - only better.
Baker Bob offered to grate the cheese if I mixed up the other ingredients
It was yummy and went down really well, even if we didn't turn them into rabbits. Think this definitely one I'll have to try on the kidlets. They love cheese but they're not usually keen on grilled cheese. Maybe if I cookie cutter the slices or turn it into a rabbit they'll be more inclined to give it a try!

Why Annabel is Late
The Annabel Challenge installment for this week is a little late.
But there's a reason for that...
We have started doing 'The IT' again, but this time with all three!
There has been a lot of mopping, scrubbing and bathing.
But yesterday, for the first time ever, Mans did a wee on the potty and followed it up with a repeat performance today.
*insert happy dance!*
Needless to say, alone Mummy time in the kitchen to indulge my culinary expertise is not a possibility while I'm watching 3 kidlets like a hawk for any sign of a full bladder or a bowel movement!
The two don't really mix well!
But there's a reason for that...
